Burrata & Cherry Tomato Salad with Pesto

Ingredients (serves 2)

1 large burrata (or 2 small)

250g cherry tomatoes (red, yellow, or mixed)

2 tbsp pesto (homemade or store-bought)

1 tbsp olive oil

4–5 basil leaves

Salt & pepper

Optional: toasted pine nuts, balsamic drizzle

Preparation
1. Prepare the tomatoes

Wash and halve the cherry tomatoes.

Season lightly with salt, pepper, and a drizzle of olive oil.
