GARLIC HERB PORK LOIN

 Instructions

  1. Preheat your oven to 375°F.
  2. Pat the pork loin dry with paper towels. This helps the seasoning stick and gives the outside a beautiful golden crust.
  3. In a small bowl, combine the melted butter, olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, black pepper, parsley, and lemon juice.
  4. Rub the garlic-herb mixture generously all over the pork loin, making sure every side is well coated.
  5. Place the pork loin in a roasting pan or baking dish. Roast uncovered for about 60–75 minutes, depending on the size and thickness of the roast.
  6. Baste the pork with the pan juices once or twice while it cooks.
  7. Check the center with a meat thermometer. Remove the pork from the oven when it reaches 145°F internally.
  8. Cover loosely with foil and let the pork rest for 10–15 minutes before slicing. This keeps the meat juicy and tender.
  9. Slice into thick pieces and spoon some of the flavorful pan juices over the top.
